Bananas Cabanas



Friday nights are a time I usually reserve for writing the Friday Night Opus.
    
Tonight I’m going to make Bananas Cabanas, grill chicken marinated in Badia Mojo sauce, and ride my bike down to the beach.

My friend Loretta Prescott sent me a package last week which included some of her famous Kettle Boys Popcorn and a book called A Trip To The Beach. It’s been my beach book of choice lately. Written by a husband and wife, they tell the story of leaving their life in Vermont to begin anew on a small Caribbean island.

The decision to leave Vermont came quickly and as the momentum gained, as they tell it, their choice to completely change their lives was both exhilarating and unnerving.

My experience in life has been that if it’s the right thing to do the pieces just fall into place. And if I every have any doubts whenever I’m making big decisions I think of these two things:

Jump and the net will appear.

Sometimes you just have to jump in and trust that your adventure will be the one to change your life in ways beyond your wildest imagination.

Bananas Cabanas
To make two banana cabanas, put ½ cup Coco Lopez into a blender. Add ½ cup Baileys Irish Cream, 2 ripe bananas, 2 cups ice cubes, and, if you like, 2 ounces white rum. It’s great with or without the rum. Blend on high speed until smooth and creamy.”
